Banana Republic

Banana Peel Oleo Saccharum Ingredients: 

• 100 grams cleaned, ripe banana peels
• 100 grams granulated cane sugar
  

Banana Republic Ingredients: 

• 2 oz Palm Republic Aged Rum
  
• 1 dash angostura bitters
• 1 dash 10% saline solution
• .25 oz Banana Peel Oleo Saccharum

Garnish:

• Dehydrated banana chip

Glassware: 

• Double old fashioned glass

Banana Peel Oleo Saccharum Instructions:

1. Combine ingredients in a sealed plastic bag and macerate for 48 hours (or until sugar is dissolved)
2. Strain the liquid and bottle
3. Store in the refrigerator

Banana Republic Instructions:

1. Fill a mixing glass with ice
2. Add all ingredients to mixing glass
3. Stir with bar spoon for 15-20 seconds until the mixing glass is cold on the outside
4. Strain into double old fashioned glass with fresh ice
5. Garnish with a dehydrated banana chip
